Malabar Spinach is a unique and versatile leafy green with deep red/purple stems (both of which are edible). When compared to traditional spinach, Malabar has 3x more vitamin C. While it can be eaten raw, most find it more appealing when stir fried, boiled, or steamed —similar to Swiss Chard.
